This time of year is such fun. I love pumpkins. God made them, so I decorate with them. I also EAT them. Yummy!!! There are sooo many good recipes for pumpkin that it’s difficult to choose which one to do next. Today, however I think I’ll give you MY pumpkin pie recipe. Here you go:

You’ll need

1 uncooked pie shell… I prefer fresh. If you’d like a great pie shell recipe Martha Stewart’s is wonderful

preheat your oven to 425

Into a large bowl, place 2 cups of fresh pumpkin mash; I’m telling you it makes all the difference in the world. (my last post taught you how.) If you don’t have fresh use 1 can, 16oz.

2 eggs

3/4 cup granulated sugar

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ginger

1/4 tsp cloves

1/4 all spice

1/4 tsp nutmeg

1 12oz can evaporated milk

Whisk all these ingredients until thoroughly dissolved.   Pour into pieshell (which hopefully you’ve already placed in your pie plate.)

Carefully place on middle rack in your oven and bake at 425 for 15 minutes. (I always set a timer because it’s too easy to forget) Then turn your oven down to 350. Let your pie bake for 40 – 50 minutes or until you can insert a butter knife into the middle and it comes out clean. Set your timer for 30 minutes so you can pay attention.   Let your pic cool thoroughly. Top it with REAL whipped cream and enjoy!!
